Cinnamon Chip Cookies

This recipe is based on my chocolate chip recipe, but as a non-chocoholic, I actually like these more! They’re perfect for when you’re kind of craving a chocolate chip cookie, but also want to break up the monotony.

They are rich and chewy and also freeze very well. 

One of my sisters isn’t big on sweets, but I gave her some of these months back and now she’s insisting I post the recipe ASAP, so yeah, they’re pretty good. 
For the cinnamon chips, I used Hershey’s brand. ​

Cinnamon Chip Cookies

Makes 2 Dozen

Ingredients: 
½ cup (1 stick) salted butter, room temperature
½ cup (110 g) lightly packed light brown sugar  
½ cup sugar 
1 egg 
1 Tbsp hot water 
¼ tsp vanilla 
1 1/2 cups all-purpose flour 
½ tsp salt 
½ tsp baking soda 
2 tsp ground cinnamon 
¾ - 1 cup cinnamon chips

1. ​Preheat oven to 350° 
2. 
In a large mixing bowl, cream together butter and sugars.
3. Add egg, vanilla, and hot water and beat until fluffy.
4. In a separate bowl, whisk together flour, salt, baking soda, and cinnamon, then mix this into the main bowl.
5. Once flour mix is fully incorporated, add 3/4 to 1 cup of cinnamon chips.
6. Roll into 1.25" balls and place on a greased or parchment-covered baking pan. Press down on each ball of dough slightly.
​7. Bake at 350° for 8-10 minutes.
